Pumpkin Pecan Pot Pie

The pumpkin pecan "Pot" pie is a perfect holiday treat that will leave your guests lounging on the couch long after dinner!

Ingredients

1 unbaked 9″ deep dish pie shell

1 cup organic pumpkin puree

1/3 cup sugar

1 egg

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

Pecan Topping Ingredients

1 1/2 cups pecan halves

1/2 cup light brown sugar (packed)

4 tablespoons cannabis-infused butter (melted) (see our canna-butter recipe )

1/2 teaspoon organic pure vanilla extract

Traditional garnishes you can use : whipped cream or cool whip, vanilla ice cream, a dash of ground cinnamon, etc.

Directions

1To Start preheat your oven to 350 degrees.

2Using a large bowl, combine the pumpkin puree, sugar, egg, ground cinnamon, ground nutmeg and salt.

3After you haved fully mixed, pour the pumpkin pie batter into the unbaked pie shell, jiggling and tapping the pie crust

4after the pour to ensure all of the air bubbles escape, and to achieve an even finish.

5The pumpkin pecan pie needs to bake for a total of 50 minutes, the plain pumpkin pie only needs to bake for 20 minutes before you add the pecan topping.

6You will want to bake the pumpkin pie before adding the pecan layer, because this will allow for the pie to set to the point where introducing the pecan topping won’t result in nuts sinking into the liquid-pumpkin-pie batter. Having a firmer pumpkin layer initially will yield a prettier pie in the end.

7Now place the pumpkin pie into your preheated oven for around 20 minutes, or until the pie begins to set.

8While the pumpkin pie has its first trip in the oven, you can use this time to prepare the medicated pecan-topping.

9Now it's time to prepare the Pecan Topping

10To start, melt 4 tablespoons of cannabis-infused butter into a small saucepan over low-heat.

11Next, in a larger mixing bowl, combine the melted cannabis-infused butter, pecans, light brown sugar and vanilla extract.

12Carefully remove the pumpkin pie from the oven and then proceed to add the pecan-topping in a single layer.

13Now put it back into the oven and bake for the remaining 30 minutes, or until a knife comes out clean when inserted into the middle of the pie.

14Remove it from the oven and place it on a wire rack to cool.

15When ready to serve, cut the pie into slices and serve immediately.
