Canna Quinoa Salad

This tasty salad recipe is gluten free, and mixed with canna-olive oil to give it a healthy dose of happiness !

Ingredients

1 cup quinoa

2 cups water

1 1/2 cups halved cherry tomatoes

15 ounce can black beans, drained and rinsed

5 green onions, finely chopped

1/4 cup chopped fresh cilantro

salt and ground black pepper to taste

1/4 cup extra-virgin canna-olive oil (see our recipe )

2 limes, juiced

2 teaspoons ground cumin

1 teaspoon salt

1/2 teaspoon red pepper flakes, or more to taste

Directions

1Bring the quinoa and water to a boil in a saucepan.

2Next reduce the heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed usually about 10 to 15 minutes.

3Then set aside the quinoa to cool.

4Next mix your canna-olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl.

5Then combine the quinoa, tomatoes, black beans, and green onions together in a bowl.

6Pour dressing over quinoa mixture and toss all together.

7Now you can stir in the cilantro and season with salt and black pepper to your liking.

8you can serve immediately or chill in refrigerator if you like.
